  Japanese Sweets In Kyoto
  November: Sakamanju

With the arrival of November Kyoto's weather is growing considerably chillier. And thus, people eagerly await the appearance of a sweet called sakamanju. It is said that:"The colder it becomes, the better this sweet tastes!" Sakamanju (酒饅頭) is a sake-flavored, manju-style steamed cake filled with koshian (漉し餡): smooth, sweet red bean paste). Sakamanju is limited to the winter season (usually November through March) because the recipe is made using koji (), a sake culture made with rice and aspergillus mold. Because koji is delicate and difficult to cultivate, the cold season allows for better control of the fermentation process. The confectioner must have great technical skill and a mastery of confectionary process in order to create delicious sakamanju.
Sakamanju was introduced to Kyoto in the Kamakura Period by a zen monk who had returned from China. Freshly-steamed sakamanju is very flavorful and goes well with any kind of Japanese tea. When it becomes stiff, it can be steamed again, or grilled it over low heat before eating.
You will enjoy eating sakamanju whether or not you like drinking sake!
This article was written with the help of the owner of Honke Tamajuken(本家玉寿軒), a time-honored confectionery that produces sakamanju . They can be contacted at 075-441-0319.
